Hi Chris,
i was also in the same situation as you were and i tried to install VMware Player on a Server 2008 R2 CORE but was unable to proceed with the installation. So i went ahead with VMware Server 2.02 and it got installed successfully.

Unfortunately you cannot install IE on Server 2008 R2 CORE. So i tried Mozilla firefox and the VMware server webpage started up. I logged in and was able to create a VM, but when i started it, it stopped working.. and i am also unable to add any virtual machines to the VMware server inventory on my Server 2008 R2 CORE.

Please suggest if you have figured out a solution already.

Good point, Vox! I forgot to add that my "Plan B" will be to just reload the server as CentOS and strip it down as much as possible.

But 2008 Core is new (to me) and I'm always up for an excuse to try something new...
